Monofloral clover honey is pale white, but a lot of polyfloral honeys are labeled as clover honey for the retail trade. Keep in mind that heat processing darkens (browns) honey. Further, White Gold is hand-packed and not whipped (aka, creamed). That's significant because honey manufacturers often whip honey to make it more spreadable, but White Gold is already highly spreadable without this extra processing.
